•Macaroni
•Onion (Green Onions are preferable)
•Pimentos (optional)
•Butter
•Salt & Pepper
•Evaporated Milk
•Sharp Cheese (grated)

Directions:
Directions:
Boil Macaroni according to directions on the box. Add salt to the water.
Cook macaroni until it is done but make sure it is not overcooked and pasty.
Drain macaroni well and rinse with hot water.
For 4 cups of cooked macaroni, add ½ stick of butter, ¼ cup of chopped onion and salt & pepper to taste.
A small can of pimentos may be added for color.
Add 2 cups of grated sharp cheese – then add more if Tony is there. (Throw in some chunks of cheese for him.).
Mix well with approximately ¾ of the can of evaporated milk.
You may put some grated parmesan cheese on top before baking.
You can prepare the night before – you may need to add more milk prior to baking.
Bake 350 degrees for 30 to 45 minutes.

This is one of those dishes that is best made without a recipe. It is pure comfort food -- a necessity for any family gathering! (After you've added more cheese, add more.)
