6 Boneless Chicken Breasts
6 Slices Boiled Ham
6 Slices of Swiss Cheese
1 Medium Tomato, peeled, seeded, & finely chopped
Dried Sage Crushed
1/3 cup Fine Dried Bread Crumbs
2 tsp. Grated Parmesan Cheese
2 tsp. Snipped Parsley
1/4 cup Butter or Margarine, melted

Directions:
Place 1 piece of chicken, between 2 pieces of plastic wrap. Working from center to the edges, (bone side up) lightly pound with a meat mallet forming a rectangle about 1/8 inch thick. Repeat with remaining chicken breasts. Place a ham slice and cheese in the center of breasts, trimming to fit within 1/4 inch of the edge. Top with some of the tomato, and sprinkle lightly with sage. Fold in the side and roll up jelly roll style, pressing to seal. Combine bread crumbs, parmesan cheese and parsley. Dip chicken rolls in melted butter and roll in crumbs. Bake in a 350 degree oven for 40 to 45 minutes. Remove to a serving platter. Stir cooked mixture remaining in pan until smooth then spoon over chicken.

This has always been my "go to" dish if I needed something that looked fancy but was easy and really good. If you don't have dried sage use oregano.
