1 boiling fowl
2 qt. cold water
6 shredded leeks
1 chopped onion
2 tbsp. rice
2 tsp. salt
good pinch of pepper
1 tbsp. chopped parsley

Directions:
Directions:
Draw and truss the foul in usual way, then place in large saucepan with cold water, salt and giblets. Bring slowly to the boil and skim well. Simmer gently for 1 hour. Add the prepared leeks, onion and the rice and continue to simmer gently until the fowl is tender. Remove the bird and the giblets and skim off any excess grease from the top of the soup. Add the parsley, taste, and season with the pepper and more salt if required. Serve the bird as the main course.
