21/2 to 3 lbs veal shank
2 oz butter
1 cup dry white wine
1 cup beef stock
1 cup brown sauce

Directions:
Directions:
melt butter in heavy skillet. Brown veal in butter. As veal browns transfer to a dutch oven. When all veal in browned and in dutch oven, pour wine and beef stock into the skillet and boil until liquid are reduced to 1 cup. Add brown sauce and blend. Pour over veal cover and bake 1 hour till veal is tender.
