3 1/2 tsp cornstarch
1 tsp cream of tartar
1 tsp baking soda
1/2 tsp baking powder
1/2 + 1/8 tsp salt
3/4 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground allspice
1 C granulated sugar
3/4 C packed lt. brown sugar
1 C unsalted butter, softened
1 large egg yolk
3/4 C ca nned pumpkin purée
1 1/2 tsp vanilla extract
1/4 C granulated sugar
1 tsp ground cinnamon

Whisk together flour, cornstarch, cream of tartar, baking soda, baking powder, salt, cinnamon, ginger, nutmeg and allspice. Set aside

Cream together butter, sugar, brown sugar just to combine. Mix in egg yolk, then pumpkin and vanilla. Slowly add in dry ingredients mixing until combined. Chill in a bowl at least one hour.

Preheat oven to 350º. Wisk together in small bowl the 1/4 C sugar with 1 1/2 tsp cinnamon. Scoop out balls of dough and roll in cinnamon- sugar mixture. Place balls on Silpat lined cookie sheets and bake 12-14 minutes, then cool for 5 minutes and serve. Enjoy!
