3 Cups sifted all purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon allspice
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
2 cups (1 pound) mixed candied fruit
1/2 cup candied pineapple, if desired cut into thin wedges
1 cup (1/2 pound) whole candied cherries
1 pound dark raisins
1 1/4 cups (8 ounces) pitted dates, cut into large pieces
2 cups pecan halves
4 eggs
1 3/4 cups firmly packed brown sugar
1 cup liquid (I use orange juice)
1/4 cup molasses
3/4 cup shortening, melted

Oven 275º
Line two 9 x 5 x 3-inch pans or four 1 pound coffee cans and line with waxed paper. Sift flour with baking powder salt, cinnamon, allspice, ground cloves, nutmeg into large mixing bowl. Add candied fruit, pineapple, cherries, raisins, dates and pecans. Mix until all fruits and nuts are well coated with dry ingredients. Beat eggs until foamy. Gradually add brown sugar, beating until light and fluffy. Blend in liquid, molasses and shortening. Add to fruit mixture, stir until well blended. Pour batter into prepared pans filling two-thirds to three-fourths full. Bake at 275º for 2 1/2 to 3 hours, until tester inserted into center of cake comes out clean. Cool. Remove from pans, wrap cooled cakes in soaked cheese cloth. I soak with rum or brandy. Then wrap the cheese cloth soaked cakes in foil and enjoy.
