1 large head of cabbage, 1 cup tomato sauce or juice and salt and pepper to taste

2 cups raw rice 3 cups or less of water
2 med onions 4 large cloves garlic 3 or 4 strips good bacon (dice and crisp in frypan)
1/4 cup minced dill weed
Cook rice until nearly done, dice onion and slowly fry until golden add chopped garlic and crisped bacon cook slowly so as not to burn

secrets I have learned when attempting to make cabbage rolls
This recipe makes around 5 dozen small rolls 1 1/2 to 2" long
1. Buy a large head of cabbage to have ample leaves for rolling
2. Freeze entire head and leave for at least 2 weeks, take out of freezer a day and a half beforehand. Freezing works best to soften leaves and they remain tough and easier to roll
3. Cook rice until it is tender but not mushy let cool and add dill, then onion bacon garlic mixture mix well and season
Now your ready to roll
4. Cut cabbage core down about 1 " to start Separate leaves and place on large dinner plate
5.Cut rib out completely and divide leaf into triangle shaped pieces about 6 " wide and 6" long
6. Large covered casserole dish works well or 2 smaller ones
7. Use outer leaves from cabbage to cover the bottom of the dish
8. Now place wedge shapped leaf in the palm oh the L hand with apex toward fingers
9. Using a tablespoon, drop a dollop of rice mix in your palm and start tucking in edges with your right hand fingers until contained then roll the package toward the apex of triangle
10. Lay snugly in casserole then salt each layer until all the filling is gone
Don't forget to pour sauce over the top ( not too much otherwise they will be soggy)
A final layer of leaves to,prevent scorching of rolls underneath
Cook in 350º Oven for 1 1/2 hours can be frozen and reheated

I always think of Auntie Mary and Auntie Kay and the skill they had to make this tricky dish look easy
Everyone has their favourite cabbage Roll recipe but I like this traditional Ukrainian one best I also followed the recipe from Savella Stetchishin the old green cookbook that I bought at Auntie Mary's suggestion. The book was coincidently published in 1967 which is the year your dad and I married. I hope you will find some time in your busy lives to give this a try. Now if only I could make pyrogies
