1 lb fresh shrimp
2 TBS butter
½ C minced green onions
¼ C minced bell pepper
1 tsp salt
¼ tsp black pepper
½ C minced celery
dash of red pepper
1 C crab meat
¼ bread crumbs
1 egg, beaten
½ tsp mayonnaise
1 tsp prepared mustard
2 eggs beaten, set aside
bread crumbs

Directions:
Directions:
Peel and de-vein shrimp, leave tails on. Set aside. Melt butter in skillet; add onions, celery, bell pepper, salt and pepper and saute until tender. Combine with crab meat, breadcrumbs, egg, mayonnaise, and mustard. Mix well. Split shrimp lengthwise almost through all the way to the tails. Stuff split with crab meat mixture. Hold shrimp in hand and squeeze to hold together. Use about 1 1/2 TBS per shrimp.Roll in bread crumbs, then dip in eggs, then back in bread crumbs. Fry in deep fat about 5 minutes.
