3 avocados (preferably Haas)
1/4 c. onion, finely chopped
1 clove garlic, minced*
1/4 c. tomato, chopped
juice of 1/2 lemon **
salt and pepper to taste

Directions:
Peel and pit avocados. Cut and mash, using two knives or a pastry cutter, leaving visible chunks. Gently fold in onion, garlic, tomato, lemon juice, salt and pepper, maintaining chunky texture. Cover with plastic wrap flat against guacamole, let stand 1 hour or so for flavors to meld. Serve with tortilla chips.

* I tend to use a heaping teaspoon or more of the minced garlic in a jar.
** I like to use lime!
