3 ½ to 4 Cups diced bananas
¼ Cup lime juice (2 small/medium)
2 Cups sugar
½ Cup water
1 ½ tsp rum extract
½ tsp vanilla

Directions:
Squeeze your limes into a large measure cup then chop the bananas straight into it. Mix it up so the bananas are coated.
Measure out your sugar and water and pour them into a nice hefty pot. Stir to dissolve the sugar and bring the resultant syrup to a boil. Once it starts boiling stir in the lime-juice bananas. This will boil over low heat for half an hour or so.
During this time stir occasionally to make sure it isn’t sticking to the sides, mash the bananas as they cook. It will slowly begin to cook down and after about 20 minutes go ahead and add the rum and vanilla extracts. Stir constantly during the last 10 minutes because it will begin to thicken and can scorch if you aren’t paying attention. You’ll know it is ready when it mounds when stirred and a track is left behind after a spoon in scraped though.

Fill sterile jars and waterbath for about 10 minutes. Let the jars cool undisturbed while the vacuum seals pop and the butter/jam sets.
