Ingredients:
Ingredients:
3 Sweet Potatoes, peeled and chopped
1/4 Cup Butter
1/2 Cup Brown Sugar
1/4 Cup Granulated sugar
1/2 teaspoons Cinnamon
2 eggs

Topping:
1/3 Cup Flour
1/4 Cup Brown Sugar
1/4 Cup Oats (not the quick kind)
1/2 tsp Cinnamon
1/4 Cup Butter (softened)
1/3 Cup chopped Pecans

Directions:
Directions:
Boil the sweet potatoes until soft. Drain. With a mixer beat in the butter, both sugars, cinnamon, and eggs. Pour this into a buttered 8-in square pan or whatever equivalent you prefer.

Topping:
Using a pastry blender, 2 knives, fork, or fingers mix everything but the nuts until it is crumbly. Stir in the nuts and sprinkle on top of the sweet potatoes. It should have rugged, various sized clumps of topping.

Bake at 350º F for about 25-30 minutes. I usually broil it for a couple of minutes so the topping is browned and crispy.

~Topping may be doubled and a few extra pecans or oats could be sprinkled in the gaps
