1/2 lb. unsalted butter (two sticks)
pinch of salt
1/2 c. sugar
2-3 c. unbleached white flour

Preheat oven to 350º. Cream butter, salt, and sugar together, then gradually add flour until the batter comes together in a ball and cleans the bowl. (Start with 2 cups of flour- if the butter is soft, you may need to add some more.) This is best done by hand, not electric mixer. Press into a 9"x9" pan. (I use a rectangular pan 7"x10" - you want the shortbread to be about 1/2" thick). Prick all over with a fork and sprinkle with decorative sugars. Bake for 35-45 minutes, until light brown. Remove from oven, cool for 5-10 minutes, and cut immediately into pieces. You must cut while warm.

This is from my great aunt on my mother's side. Auntie Barbara emigrated from Scotland and worked many years as a cook for a family on Park Avenue in NYC. I only remember her slightly, and my memories involve her shortbread!
