Spice Cake with Maple Frosting

2 cups cake flour, sifted
1 cup sugar
1/2 cup shortening, (butter or I used
1 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground cloves
1/4 tsp ground nutmeg
1/4 tsp ground allspice
1/4 tsp baking soda
2 tsp. baking powder
3/4 cup milk
1/4 cup unsulphured molasses
2 large eggs

1. Heat oven to 350. Grease tow 9 inch cake pans and line bottoms with parchment, set aside.

2. In a mixing bowl combine flour through baking powder.

3. In a separate bowl stir together milk, molasses and eggs. Add to dry ingredients and mix on medium speed, about 2 min.

4. Pour batter and spread into prepared pans and bake until toothpick inserted into center comes our clean, 27 to 30 min. Let cool.

5. Spread icing one one cake, then top with second layer and frost the top. If some drips down the side it will look fine.

Maple Frosting By Ina Garten

Frosts the tops of a layer cake or 10 cupcakes.

6 ounces cream cheese, at room temperature. Be sure the cream cheesse and butter are absolutely at room temp or the frosting will be lumpy. I leave them on the counter overnight.

3 Tbs. unsalted butter, at room temperature

2 Tbs. pure maple syrup

1/2 teaspoon pure vanilla extract
2 cups sifted confectioners; sugar

In the bowl of an electric mixer fitted with the paddle attachment, cream the cream cheese, butter, maple syrup and vanilla on medium low speed until very smooth. With the mixer on low, SLOWLY add the confectioners; sugar and mix until smooth.
