5-6 Cups fresh peaches sliced—about 8
¼ Cup flour
¼ Cup sugar
½ Cup brown sugar
½ -1 teaspoon cinnamon
1 teaspoon vanilla extract
Glug or two of bourbon *optional

Pastry for double layer pie (large pie plate)

Directions:
Preheat oven to 415°.
Combine all filling ingredients and let sit so it gets juicy while you make the crust. Give it another good stir before pouring it into your pie shell.

Lay top crust on then cut a couple of vents. Bake at 415° for 10-15 minutes then reduce heat to 325° and continue baking for another 45-50 minutes, until the filing is bubbly and crust is lightly browned.

Let cool completely before cutting or it will be runny.
