1 (9 inch) unbaked pie crust
2 cups grated cheese, divided
1 TBS oil
˝ onion, diced
3 roma tomatoes, sliced
1 teaspoon dried basil (optional)
Several large fresh basil leaves
3 eggs, beaten
1/2 cup milk
salt and pepper to taste

Preheat oven to 400 degrees. Prick pie shell with a fork and bake in preheated oven for 8 minutes.

Meanwhile, heat oil in a large skillet over medium heat. Sauté onion until soft. In a small bowl, whisk together eggs and milk. Season with salt and pepper (I hardly use any)
Spread 1 cup grated cheese in the bottom of pie crust. Layer onions over cheese and top with tomatoes. Top tomato slices with the fresh basil leaves. Cover with egg mixture. Sprinkle top with remaining cheese.
Bake in preheated oven for 10 minutes. Reduce heat to 350 degrees and bake for additional 20-25 minutes, or until filling is puffy and golden brown.
Let cool almost completely before cutting
