2 C rice
2 tomatoes, peeled and chopped
1 C chopped onion
1 clove crushed garlic
¼ tsp chili powder
¼ tsp oregano
5 TBS cooking oil
3 ½ C hot chicken broth
1 green bell pepper, chopped
1 C sliced carrots, bite size
1 C green peas
1 TBS parsley

Directions:
Directions:
Blend tomatoes, onion, garlic, chili powder, and oregano in blender. Add rice to heated oil and brown. Add tomato mixture to rice, cook until moisture is gone. Pour into baking dish adding chicken broth, adding vegetables. Bake at 350° for about 35 minutes. Sprinkle with parsley when done.
