1/2 C butter, softened
1 1/2 C sugar
2 eggs
3 TBS cocoa
1 tsp red food color
3 TBS hot strong coffee
1 tsp baking soda
1 tsp vanilla
1 tsp salt
2 C flour
1 C buttermilk

Red Earth Icing:
1lb box powdered sugar (3 1/2-4 cups)
1 stick oleo (margarine or butter)
3 TBS cocoa
1 tsp red food color
3 TBS hot strong coffee
1 tsp vanilla

Directions:
Directions:
Cake:
Mix butter, sugar, and eggs.
Mix as a paste: Cocoa, red color, coffee, and baking soda.
Mix the first two mixtures together then add flour, salt, vanilla, and buttermilk.
Bake 2 layers at 350° about 25-30 minutes. Cool.

Icing:
Mix as paste: Cocoa, food color, coffee, and vanilla
Blend powdered sugar and oleo, add paste and mix well. Use more coffee if needed.
Spread on cake.

*I prefer to omit the food coloring from the icing, replacing it with an extra tsp of coffee
