Ingredients:  
Potatoes- as many as you want
Water- slightly cover the potatoes
Milk- See below
Salt & Pepper- to taste
Celery- 3 stalks chopped
Onion- 1 medium size chopped
Mozzarella cheese- shredded 8 oz package

Directions:
Directions:
Peel and dice as many potatoes as you want and put in your favorite pot.
Add onion and celery
Fill with water just covering the potatoes.
Boil on medium high until potato breaks when you “stick a fork” into it.
Using a measuring cup, remove about 1/3 of the water and replace it with milk.
Bring it almost to a boil, add cheese slowly and stir in until it melts.
Salt and pepper to taste. Serve with hot corn bread.
