2 lb. Chuck or Round Steak
1/2 C. Flour
2 tsp. Salt
12 tsp. Pepper
3 T. Shortening
2 Small Onions, Sliced
2 C. Canned or Stewed Tomatoes
2 Carrots, Diced
3 Stalks Celery, Diced
1 qt. Beef Stock

Directions:
Directions:
Pound mixture of flour, salt, and pepper into steak slices. Brown meat and onions in skillet. Combine with remaining ingredients in covered casserole.

Bake at 300º for approximately 2 hours. Then bake uncovered for about 30 minutes to thicken sauce.

Memories: Mom always made this in the electric skillet and used her homemade canned tomatoes that contained onions and celery. The tomatoes tenderized the meat, but no one particularly liked the tomato mixture except for Nancy. This rather bland recipe, minus the beef stock, could be found in the original 1950 Betty Crocker cookbook.
