1 ripe banana
2 eggs
a pinch of baking powder
a pinch of cinnamon

Directions:

Mash banana until it has a pudding consistency. Add eggs, pinch of cinnamon and baking power and mix again. Batter will be fairly thin.

Cook on griddle at 350 degrees as you would traditional pancakes. Serve with syrup.

Makes 6 pancakes.

Rachel likes to make this as an easy and healthy alternative to traditional pancakes as this recipe uses no flour. It's also a great recipe for those times when you want something that's easy to make that will satisfy your sweet tooth. Perfect for a quick breakfast before school!
