1/2 c. Hot Water
1 c. Sugar
1 tsp. Almond Extract
1 2/3 c. Cake Flour
1/2 tsp. Baking Powder
1/2 tsp. Salt
1 pt. Heavy Cream Whipped
1 c. Candied Fruit (diced)

Directions:
Preheat over to 325º. Beat 10 eggs in large bowl, gradually adding ___ 1/2 cup hot water; heat until almost double in volume. Continue heating and gradually add 1 cup sugar. Add 1 tsp. almond extract. Sift together candied fruit on top. Refrigerate until ready to serve.

Cup cake flour, 1/2 tsp. baking powder, 1/2 tsp. salt. Fold in the sifted ingredients 1/4 at a time with a rubber spatula or wire whisk. Line bottom of two deep 9 inch cake pans with waxed paper or use 10 inch ___ pans. Pour batter into pans. Bake 30-40 minutes. Invert pans to cool to frost. Whip 1 pt. heavy cream until stiff combine 1 cup whipped cream with 1/2 cup diced candied fruit. Spread between layers, cover top sides with remaining whipped cream. Sprinkle ___.
