1 c. soft butter
1/2 c. sugar
2 tsp. vanilla
2 c. sifted flour
1/4 tsp. salt
small pecan halves, candied cherries, pitted dates, blanched almonds, flaked coconut

Directions:

Shape dough around nut or piece of fruit to form 1" balls. Roll in coconut. Bake in 325º oven about 20 minutes.

This is a favorite Christmas cookie recipe. I would make many cookie varieties in December for the holidays and then freeze them. The kids always found them - I know they are just as good frozen as fresh!
