5-6 medium tomatoes
2 med-large cloves fresh garlic
7-14 serrano peppers
½-1 tsp. salt

In a large corning ware dish put washed tomatoes in the microwave on high for 5 min. Turn tomatoes over and microwave a little longer long enough for tomatoes to be very soft.

Use a fork and sharp paring knife to cut out tomato core. Be careful because the tomatoes are hot. I don’t core them first because even more juice come out.
Put washed peppers in blender be careful these are hot too! Wash your hands well after cutting stems off peppers.

Place tomatoes (leaving juice in corning ware dish) over peppers in blender. Add garlic with garlic press and salt to taste.
Blend away until pretty liquid. It won’t take long. Mostly just need to get peppers cut up small. When you take the lid off the blender, don’t breathe deeply. The peppers will put off a powerful aroma and take your breath away.

The aroma will settle down over time. Pour into clean bell jars and refrigerate.

Will make about 32 oz.

This recipe was shared with Mark from one of the ladies he worked with at Marshal Gas controls. It is very likely close to the red salsa they serve up at Lolita’s. It is simple and very tasty. Great with chips, on eggs, tacos, or mixed with melted Velveeta to make queso. My boys put it on everything. It is often a much requested gift item at Christmas.
