1 c. uncooked rice
1 large carrot, diced
1 stalk celery diced
1 small white onion diced
2 cloves garlic diced
1 tbsp. tomato paste
2 tbsp. olive oil
1⁄2 tbsp. salt
1⁄4 tsp. black pepper
2 c. chicken stock

Directions:
Directions:
In a heavy saucepan, heat oil on medium heat.
Add rice and stir constantly until rice is lightly toasted.
Add onion and sautee for 2 minutes.
Add celery and carrot and sautee for 5 minutes.
Add garlic and stir for 1 minute.
Add salt and pepper.
Add tomato paste and chicken stock and bring to a boil.
Turn heat to low and cover with lid.
Cook for 20 minutes.
Remove from heat and let sit 5 minutes before fluffing with a fork
