2 cups sugar
2 heaping Tbsp Hershey's cocoa
Additional 1/2 tbsp cocoa
1 cup Half & Half or milk
1 Tbsp apple cider vinegar
1 Tbsp Karo white syrup
3 dashes of salt
1 Tbsp butter
3 large marshmallows
1 Tbsp butter
1 tsp vanilla

Directions:
Directions:
Add sugar and cocoa to cold saucepan and mix together. Add Half & Half, vinegar, Karo syrup and mix. Add salt. Raise heat to medium high and bring to boil. When boiling add 1 Tbsp butter and melt into mixture. Bring back to a boil. Stir constantly as it boils. The mix will boil down and start to boil harder when it is ready to be tested. Look for deep bubbles that are about to pop. The color will be less shiny, duller. Take off heat and spoon small amount onto a small plate. Stir the sample quickly to see if it starts to set up and harden. If it isn't ready, return to burner and continue to cook. Test often and always pull pot from burner while testing. When fudge is ready, put back on burner and bring to boil a final time. Immediately when it starts to boil, pull from burner and add marshmallows, 1 Tbsp butter, and vanilla. Fold ingredients in until melted.

Place pan in the sink in cold water to help cool and stir fudge vigorously, almost whipping it with a large spoon. Add chopped pecans. As the fudge cools, it will start to set up. Pour onto greased plate and let cool. Cut into squares for serving.
