Mama Lou's Amaretto Chicken Recipe

3-4 oz good quality chicken breasts, 8
1/2 c. flour
2 tsp. salt
1/2 tsp. white pepper
4 tbsp. butter (add more if needed)
1/2 c. amaretto
2 c. fresh mushrooms, sliced
1/4 c. sliced almonds, toasted

Sauce:
2 c. heavy cream
1/4 c. amaretto
1 tbsp. brown sugar

Directions:
Directions:
Combine flour, salt and pepper in a small bowl.
Dredge the chicken in flour and sauté in 2 tbsp. of butter for 5 minutes.
Pour amaretto into sauté pan and flambé.
Reduce heat to simmer and continue cooking until sauce thickens slightly and
chicken is cooked.
Remove from heat.
Saute fresh mushrooms in remaining 2 tbsp. butter over medium heat until tender,
about 5 minutes.
Arrange chicken on platter and top with mushrooms and sprinkle with almonds.
Serve with amaretto sauce.

Prepare sauce when starting the meal:
Blend all ingredients in a saucepan and boil. Simmer until thick, which will take approximately 20 minutes.
