Pumpkin Cake:
1 c. oil
2 c. sugar
3 eggs
2 c. flour
1 tbsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1 can pumpkin (15 oz)
1 tsp. vanilla

Cream Cheese Frosting:
(This cake is very good without the frosting)
8 oz. powdered sugar
¼ c. butter, softened
¼ c. cream cheese, softened
1 tsp. vanilla

Cake:
Mix oil and sugar well. Add eggs and stir until well blended. Sift dry ingredients then add to egg mixture. Add pumpkin and vanilla. Pour into a prepared bundt pan and bake for 1 hour at 325˚ or into muffin pan with muffin papers for 20 – 30 min. Check for doneness with a toothpick.

Cream Cheese Frosting:
Combine powdered sugar, butter, cream cheese, and vanilla.
Mix all together with a beater.

Frost when the cake is completely cooled.
