Oil Pie Crust:
1 c. flour
¼ c. oil
½ tsp. salt
2 tbsp. milk

Key Lime Pie:
1 baked pie crust
1 can sweetened condensed milk
3 egg yolks (save the egg whites for merengue)
½ c. key lime juice (or lemon juice)


Mix milk and yolks together. Add lemon juice. Mix with a spoon until well blended. Pour into cooked pie crust.

Merengue:
¼ cup sugar
½ tsp cream of tartar
½ tsp vanilla
3 egg whites

Oil Pie Crust:
Mix flour, oil, and salt together with a fork, then add milk and continue to mix until the dough clumps together. This crust doesn’t roll very well, so I just put the dough into a shallow pie plate and press the dough into a crust with my fingers. The edge will be thin so I just try to make it a smooth edge instead of a fancy fluted edge.
Bake at 400˚ for 8 min.

Key Lime Pie:
Mix milk and yolks together. Add lemon juice. Mix with a spoon until well blended. Pour into cooked pie crust.

Merengue:
Beat egg whites until stiff. Beat in cream of tartar, sugar, and vanilla.
Spread merengue onto filling making sure to completely cover, making the merengue touch the crust to seal. Bake at 400˚ till browned, 5- 10 min.
Cool or refrigerate before serving.

I usually make merengue cookies out of the egg whites and top with whipped cream or nothing, because I like merengue better as a cookie (crunchy) than soft on a pie.

Merengue kisses:
Increase sugar to ½ c. and beat until very stiff. Put into a zip lock bag and cut off a small corner. Pipe onto parchment paper about 1 ½” “kiss” and bake at 250˚ for 40 min and then let cool in oven for another 20 min.

This is another of my family’s Thanksgiving pies. I grew up using lemon juice so I prefer it, but I have found Key lime juice in the store recently and have used it also. I began using this easy crust when I learned it in Homemaking class. It is also an easy crust for children to make.
