2 yellow summer squash sliced into 1/2 inch thick pieces
1 zucchini sliced into 1/2 inch thick pieces
2 bell peppers, red, yellow or orange
6 to 7 large mushrooms cut in large pieces
1 onion slice thick and cut into quarters
1/4 cup olive oil
1/4 cup balsamic vinegar
Lemon pepper
Northwest Spice
Minced Garlic
Ground Pepper
Oregano

Cut and the vegetables and place in a gallon size ziplock bag. Add oil and vinegar - I put in the ratio I like, a bit more oil than vinegar. Have enough to coat the vegetables. Add spices. I don't measure but add enough to mix well with the vegetables.Marinate for at least 30 minutes but the longer the better in the refrigerator. Heat your grill. A grill basket works best for this. The vegetables get cooked and you can stir them around to get them to cook more evenly. Grill for at least 10 minutes and depending on how you like your vegetables maybe a bit more.
