2/3 (scant) Sweet Milk

Cook fat hen, salt seasoned almost done chicken should be cut up & boiling in plenty of broth to ___ the spices when dumpling are added.

Make Dumplings
Sift flour, salt ___, and cut in one rounded 1 lb. shortening, add milk all at once, and mix as for biscuits to form a stiff dough. Divide dough into 2 portions & roll about like pie pastry on floured cloth. Cut in strips 2" wide. Stretch pieces as you add them to chicken broth. Place several strips of dough on top of chicken in boiling water. Replace lid and allow to continue boiling until broth has boiled up, over dumplings then add another layer of strips. Let then boil over, continue until all dough is used (4 or 5 times / allow 20 - 30 minutes for dumpling to cook of the broth runs __ heat milk and add pushing back dumping and chicken). Broth may be thickened slightly before serving by adding flour and water in this ___, moving chicken about careful to keep pieces intact.
