4 TBSP butter, melted
1/2 cup sugar or honey
2 eggs, beaten
1 cup banana, mashed
1-3/4 cups Pamela's Gluten Free Baking and Pancake Mix
1/4 tsp salt
1/2 tsp vanilla
1/2 cup nuts (optional)

Directions:
Directions:
Preheat oven to 350º F. Beat together butter, sugar or honey, eggs and banana. Add remaining ingredients and mix together. Pour into a large greased loaf pan. Bake in an oven for 1 hour, or until an inserted toothpick comes out clean.

If I make muffins or quick breads, I use Pamela's Baking and Pancake Mix because it is Gluten Free and quick and easy!
