Baked Pie crust

Pie Filling
4 cups whole milk
1 1/2 cups sugar
1/2 cup Hershey's cocoa
1 1/4 cup flour
4 eggs at room temperature (separate into yolks and whites)
2 Tbsp butter
1/2 tsp salt
2 tsp vanilla

Meringue
6 egg whites
1/4 tsp cream of tartar
12 Tbsp sugar
Dash of salt

Directions:
In a tall saucepan heat 4 cups to scalding point or when it starts to steam. Separately mix sugar, cocoa, egg yolks. flour, and salt. Pour 1/2 cup of scalded milk into mixture and combine into paste. Slowly pour mixture into remaining milk and continue stirring. Add butter and melt into mixture. Bring to a boil until it thickens to the texture of brownie batter. It is very important that the pie filling is thick enough so that it doesn't run when sliced. Remove from heat and add vanilla.

Pour chocolate mixture into two baked pie crusts. Top with meringue.

Meringue
Mix egg whites on high speed until starting to rise. Add cream of tartar and salt. Add sugar slowly while mixing on high speed. Continue to whip until meringue is white and peaking. This means that the meringue will hold on the spoon and the tips will keep their peak. Spread meringue over pie evenly and be sure to cover the edges of the pie crust so they will be sealed.

Bake pie at 350 degrees until top is browned. Cool and eat.
