1/2 cup (1 stick) butter
1 cup firmly packed brown sugar
1 cup grated raw potato
1 cup grated raw carrot
3/4 cup dates
3/4 cup raisins
1/2 cup chopped walnuts (exempt for nut allergies)
1 cup flour
1 tsp baking powder
1 tsp salt
3/4 tsp cinnamon
3/4 tsp ground cloves
3/4 tsp ground nutmeg
Sauce:
1/2 cup firmly packed brown sugar
2 tbsp cornstarch
1/4 tsp salt
1 1/2 cups water
2 tbsp butter
3 tbsp Grand Marnier liquer

Directions:
Directions:
1. Beat butter and sugar in a large bowl with or without mixer at low speed and beat until smooth; beat in carrot, potato, dates, raisins and nuts until well blended.
2. Sift flour, baking soda, salt, cinnamon, cloves and nutmeg over bowl; stir until blended.
3. Butter a 6 cup pan or steam pudding pan and sprinkle with sugar. Spoon batter into pan; cover with double thickness of heavy duty aluminum foil and tie with string or use steam pan cover.
4. Place mold on a rack in a large pot or kettle. Fill kettle with boiling water to half the height of mold, cover kettle.
5. Steam over low heat approximately 3 hours or until a wooden skewer inserted in centre comes out clean. Cool completely.
6. Can be frozen - to reheat put in 300 degree oven for 20 minutes

Sauce: In small saucepan, combine sugar, cornstarach, and salt. Stir in water. Bring to a boil, stirring constantly. Boil for 2 minutes. Stir in butter and liquer.

I have been making this for Christmas dinner for about 20 years now and my family really look forward to it. It is a perfect dessert after Christmas dinner.
