2 tbsp. butter
1 large onion
3 cloves garlic, minced
2 tsp fresh ginger
4 cups vegetable or chicken stock
5 cups squash
2 apples, peeled and cut small
2 tsp curry powder
1/2 tsp pepper
1 tsp sage
2 tbsp maple syrup
1 cup coconut milk
1 tbsp of plain yogurt or sour cream (if desired)

Directions:
Directions:
Putting onion in first, fry onion, garlic and ginger in butter.
Add vegetable or chicken stock, squash, apples, curry powder, pepper and sage.
Boil all together until the squash is mushy. Let cool just a bit, then throw in the blender to puree. Put back in your pot, add 2 tbsp maple syrup, and 1 cup or 1 can of coconut milk.
