Dressing:
1 c veg oil
1/2 c hoisin sauce
1/2 c rice vinegar
2 tbsp soy sauce
2 tsp peeled and grated fresh ginger
2 cloves garlic, minced

Salad:
two 10-oz pkgs baby spinach
two 10-oz bags heart of romaine
4 med carrots, coarsely grated
6 green onions, chopped
3 c thin strips of cooked chicken, turkey or duck
one 29-oz can mandarin orange segments, drained
2 c chopped cashews

Dressing:
in a med bowl, whisk together dressing ingredients until smooth.

When ready to serve, assemble the salad. Combine the spinach, romaine, carrots, scallions, chicken and orange segments in a large bowl. toss with dressing, adding more as needed. Sprinkle with the cashews and serve immediately.

Have made this with all types of lettuce.
