Microwave Roux Base:
2/3 c veg oil
2/3 c flour
1/2 c each finely chopped onions, green onions, celery and green bell pepper
1 tsp minced garlic
1 lb spicy sausage, cut into bite-sized pieces (or 2 c cubed ham)
1 lb sliced frozen okra
2 lg onions, chopped
6 c chicken stock
1 tbsp brown sugar
1 c tomato sauce
1 tsp cajun seasoning (see below)
3 c cooked chicken (skinless, cut into bite-sized pieces)
2 c cooked long grain white rice

Cajun Seasoning:
1 c coarse sea salt
3 tbsp black pepper, coarsely ground
2 tbsp garlic powder
1/4 c dried parsley flakes
1 tbsp cayenne pepper
2 tbsp mild chile pepper
2 tbsp dark brown sugar

Make Cajun Seasoning by blending well. Store in a tightly sealed glass jar.

Mix together the flour and oil in a 1-quart measuring cup. Microwave, uncovered, on high for 6 minutes. No longer. CAREFULLY stir in the finely chopped vegetables and garlic. cook another 45-60 seconds on high or until color is mahogany. Carefully stir to mix well. This will burn easily. If burnt, start again.

Place the microwaved mixture in a large heavy pot.

Heat and stir in the sausage. Add the okra, onions, chicken stock, brown sugar, tomato sauce and seasonings.

Bring the mixture to a boil, stirring. Cover and simmer for 30 minutes. Stir in the chicken and cook for 15 minutes longer.

Remove from heat; taste and correct the seasonings. (Freezes well.)

Serve ladled over a large spoonful of fluffy long grain white rice.
