1 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1/2 tsp salt
1 cup oil
1 1/2 cup brown sugar
3 eggs
1/2 cup chopped walnuts
1/2 cup crushed pineapple, drained well
1/2 cup raisins
1 cup finely grated carrot

Directions:
Directions:
Preheat oven to 350 degrees F.
Grease and flour 9-inch square pan, or 4 3 x 6 loaf pans.

In a medium bowl, sift together first five ingredients, set aside.

In a separate bowl, whisk together oil, brown sugar, and eggs; pour into flour mixture and stir well.

Stir in walnuts, pineapple, raisins, and carrots.

Pour into prepared pan(s). Bake 30 - 40 minutes if using 9-inch pan, or 20 minutes for mini pans, or until lightly browned. Test with toothpick, or cake tester to make sure it is down.

Brenda Davidson found that baking this in a bundt pan worked the best to make sure the middle was cooked.
