1 lb. cleaned sea scallops 16 large
1 shallot chopped
1t chopped garlic
Juice of one lemon
1 cup white wine
2 T olive oil
1 T butter
2 lbs fresh baby spinach
Onion powder and lemon pepper

Directions:
Directions:
Heat oil and butter in large cast iron skillet. Season cleaned dry sea scallops with onion powder and lemon pepper. Sear on both sides. (you want a nice brown color on each side -about 2 minutes a side) Add shallots and garlic cook for 1 minute. Do not burn the garlic. Add lemon juice and white wine. Simmer and remove scallops. Wilt spinach in the same pan. Serve scallops over wilted greens. Pouring any sauce over the scallops.
