1 cup warm water
4 yeast
1 cup + 2 tablespoons butter
2 3/4 cup milk
6 tablespoons sugar
2 teaspoons salt
3 eggs
15 cups flour (6+9)
egg wash (1 egg and 1 tablespoon water, beaten together)

Directions:
Directions:
Put water in a large bowl. Sprinkle with yeast. Let sit 10-15 minutes until foamy.

Meanwhile melt butter. Add milk; cool to lukewarm.

Add to yeast mixture. Add sugar, salt, eggs, and 6 cups of flour. Stir 200 strokes. Add remaining flour. Stir until a shaggy mass. On lightly floured surface, knead 100 times using additional white flour as needed. Place in greased bowl and turn. Cover. Let rise until doubled.

Punch down. Turn onto floured board. Divide into three pieces. Divide each of these into three pieces, one slightly smaller than the others. Using picture, shape one of the larger pieces into the body and one into the head. Using the remaining dough do the embellishments. Brush with egg glaze. Do not let rise; bake immediately.

Bake at 350 degrees for 15 minutes on the lower shelf while shaping other Santa. Raise first one to higher shelf and add other Santa. Bake first one until done. Raise second Santa and add third. Bake until done.

Can make smaller Santas with less detail. Divide into 12 pieces and shape. Work quickly.
