2 cup soy sauce
1 cup water
1/2 tsp onion powder
1/2 tsp pepper
1/2 tsp Tobasco
1 cup dry white wine

Mix and brine salmon chunks for 8 hours or more, keeping refrigerated.

Smoke to your specifications.
