8 Beef Short Ribs
1 large Onion
3 Carrots
3 Celery Stalks
1 lb. Mushrooms
4 c. Beef Broth
1 c. Red Wine
1/2 c. Flour
3 T. Olive Oil
1 T. Butter

Directions:
Directions:
Rinse and season with salt and pepper short ribs. Put flour in a gallon plastic bag and place about 4 ribs inside and shake. Coating the ribs lightly. Repeat with the remaining ribs.
In heavy cast iron Dutch Oven heat olive oil and butter. Brown the first four short ribs on all sides. Repeat with the next four. While the ribs are browning dice the onion, carrots and celery.
Remove browned ribs and set aside. Add diced veggies to the pot and brown. Try to scrape up brown bits on bottom of pan. Add whole mushrooms . (Cook another 6 or 7 minutes) Remove mushroom and set aside. Add red wine and deglaze the pan. Put short ribs back in pan and add beef broth. Bring to a simmer. Preheat oven to 325. Put the lid on the Dutch oven and bake for about two hours. Add mushrooms back to the pot at about the two hour mark and heat through. Cook until tender.
