1 cup onion, chopped
1/2 cup sliced carrot
1 cup celery and leaves, chopped
1/2 cup zucchini, sliced
1 tomato, peeled and chopped
1 cup shredded cabbage
2 cups boiling water
salt and pepper
2 cups chicken bullion
1 cup tomato juice
dash soy sauce
1/4 tsp oregano
1/2 tsp rosemary
2 Tbsp minced parsley
1 small clove garlic
1/2 bay leaf
1 Tbsp oil

Directions:
Directions:
Saute in oil, onions, carrot, add all other ingredients but cabbage and zucchini. Add more water to cover vegetables. Boil then simmer for an hour till tender but not mushy. Add zucchini and cabbage, simmer till cabbage is crisp tender. Remove garlic clove and bay leave..
