6 very ripe tomatoes, peeled and chopped coarsely
1 med. cucumber, chopped
1 sm. onion, chopped
1 sm. green pepper, chopped
6 to 8 green onions, cut in 1/2-inch lengths
1 clove garlic, minced
1 1/2 c. tomato juice (adjust as necessary)
2 T. red wine vinegar
1 tsp. salt
1/8 tsp. black pepper
1/4 c. olive oil
Dash Tabasco

Peel tomatoes by immersing them one at a time in a saucepan of gently boiling water. When skin slips, remove and peel. In a large bowl, combine all ingredients. Chill. Adjust seasonings and add more Tabasco, if desired. Serve with croutons.
