1/2 c sugar
1/2 c vinegar
1/2 c shoyu
1 tsp grated ginger
1/2 c green onions, chopped
chili pepper to taste
1 tsp roasted sesame seeds (optional)
sliced round onion (optional)

Directions:
Directions:
Clean then chop or tear about 1 pound of raw ogo so the pieces are not too long (roughly 2" is pretty good). Blanch ogo in boiling water so the color changes from reddish brown to green. Rinse ogo under cool water to stop cooking. Overcooked ogo gets mushy so don't overcook it. Drain excess water. Combine remaining ingredients and soak ogo at least overnight before eating it. Adjust the taste by adding more of whatever you think it's missing.

The ogo will keep for months in the refrigerator.
