2 c. flour
2 c. sugar
1/2 c. Crisco shortening
1 stick margarine
1 c. buttermilk
2 c. shredded coconut
1 c. pecans
5 egg yolks
5 egg whites
1 T. vanilla
1 tsp. baking soda
1/2 tsp. salt

Icing ingredients
8 oz. pkg. of cream cheese
1 box of powdered sugar
1 stick margarine
1 T. vanilla

Cake directions:
Cream the margarine, Crisco, and sugar together. Add the egg yolks. Add the dry ingredients, a little at a time, alternating with the buttermilk. Add the vanilla, coconut, and pecans. Then, beat the egg whites stiff and fold them into the batter. Bake in 3 greased and floured round cake pans for 25 to 30 minutes at 350 degrees. Let cool before icing.
Icing directions:
Mix together cream cheese, powdered sugar, softened margarine, and 1 T. of vanilla. Spread on cooled cake.

I made this cake for my Dad's 60th birthday. It was also my son, Michael's birthday. I think it was the 1st time that Mabel asked me for my recipe for something I made. I was so excited that she wanted one of my recipes!
