3 c. shredded zucchini
1 2/3 c. sugar (I use 2/3 c. brown sugar in the mix)
2/3 c. vegetable oil
2 tsp. vanilla
4 eggs
2/3 c. water or juice
3 c. flour
2/3 c. cocoa
1/2c. chopped nuts
2 tsp baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. baking powder
1/2 tsp. cloves

Directions:
Directions:
Preheat Oven to 350º. Mix wet ingredients. Sift together dry ingredients. Mix both together. Fold in chopped nuts. Pour into 3 loaf pans with greased bottoms. Bake for about 1 hour.

Cool. Optional: ice with 1 c. chocolate chips melted with 3 T. butter and stir in 2 T. raspberry preserves.
