1 pint fresh oyster with liquor
1 pint half & half
1/4 stick unsalted butter
2 heaping tbs. celery, finely chopped
2 heaping tbs. onion, finely chopped
1 tbs. fresh parsley, chopped
Sea salt, to taste
Fresh ground pepper
Everglades seasoning, or your favorite

In a 2 quart soup pan, melt butter on med/low heat. Add celery and onion, saute until onions begin to turn brown. Add the parsley, salt and pepper and stir in. Add half & half, increasing the heat to medium high. Keep stirring with wooden spoon, slowly bring stew to a boil. Add oysters and oyster liquor. Bring stew back to a boil and then immediately remove from heat. Cover and allow to sit for about 2 hours. When ready to eat reheat and garnish with fresh parsley.
