"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

The first list of ingredients is for a cookie sheet size batch. The second list (in parenthesis) is for a 9x13 batch.

1 1/2 cup (2 1/4 cup) flour
1/2 cup (3/4 cup) unsweetened cocoa powder
2 cups (3 cups) sugar
1/2 tsp. (3/4 tsp) salt
4 (6) eggs
2 (3) squares of butter
2 tsp. (3 tsp) vanilla

Directions:
Directions:
Mix softened butter and sugar, then add eggs and vanilla, and mix again at low speed. Mix together dry ingredients, and add to butter mixture, stirring until mixed (beater on low). Pam spray 9x13 or 11x 16 sheet pan, depending on size. Bake 350 degrees for 25-30 minutes. Let brownies cool (about an hour) then spread on frosting:

3/4 square (1 square) butter
3/4 ( 1) small package powder sugar
1 tsp (1 1/2 tsp) peppermint flavor
a little milk, as needed (couple of tablespoons)
green food coloring (2-4 drops)
beat together and spread on brownies

Put in freezer 20 minutes until frosting is solid.

Chocolate top:

8 (12) oz semi sweet baking chocolate squares
1/2 (3/4) square butter

Put in bowl, microwave 30 sec. Stir, repeat till all is melted. Drizzle over brownies, spread evenly. Do it quickly because it starts setting up. (Use small spatula)

Keep brownies in refrigerator until ready to eat. Get out 10 minutes early to soften before cutting.

Personal Notes:
Aubrey brought these to a Relief Society activity of favorite holiday recipes and they were one of the best mint brownie recipes I have tasted.
