2 c. dry bread crumbs
4 T. butter
1 quart hot milk

1/2 c. sugar
2 eggs, slightly beaten
1/2 tsp. salt
1 tsp. vanilla

"So many combinations make an excellent bread pudding that a recipe is only a general guide. If you prefer a sweeter pudding add more sugar. Season discreetly with any spice. To make a firmer pudding, add less milk, even as little as 2 cups. To make a fluffier pudding, separate the eggs and add the whites last, beaten stiff. For a richer pudding, add 1 cup orange marmalade, chopped raisins, dates, figs or add 1/2 c. chopped nut meats." Butter a baking dish put in it the bread crumbs, butter and hot milk. Cool. Set the oven at 325º. Add to the crumbs and milk: the sugar, eggs, salt and vanilla. Stir to blend. Bake 1 hour. Serve with plain or whipped cream. Note: I usually end up putting more bread in there! In fact, I take leftover bread (that I've frozen) and tear it apart. Challah bread is nice too. If the bread is fresh, I leave it out a day or two then tear it!
