kale, any variety
3 T. garlic, minced. Be generous
2-3 medium onions, chopped
1 green bell pepper, coarsely chopped
1 small red bell pepper, coarsely chopped
olive oil
Madeira (optional), or any red wine
1/4 c. - 1/2 c. grated Parmesan cheese
1 T. chicken base mixed with 1 c. of hot water
1 tsp. paprika
1/2- 1 tsp. chili powder
2 tsp. onion powder
1/4 tsp. black pepper (or several dashes)
2 tsp. Italian seasoning

Prep: thoroughly wash kale. Discard center stems and tear leaves into medium pieces.
In a large pan , saute garlic, onion, and peppers in olive oil. While they are cooking, add 1/4 c. - 1/2 c. Madeira or any red wine. Add kale and continue to cook over medium heat. Add the chicken base mixed with water and the rest of the ingredients. Cover and simmer for a half hour* adding water as needed. Greens should be limp and fully cooked through. Taste. Add more spice if desired. * Can take longer depending how much kale has to be added. May have to be added a handful or so at a time. Once it is limp, add more.
